Cheese Press This is the Dutch style cheese press I built for hard cheeses. I use a 20# dumbbell for my weight, it has a 1" handle. I use the pin at the 6" mark for the plunger, each notch in the lever equals 10# of weight for a maximum of 70#. I bought the plastic cheese form from Lehmans in Kidron, it's about 8-1/2" in diameter. I use a kettle to hold the whey while it is draining. The finished cheese weighs between 5-6 pounds.
